Circassian-style chicken libzha

Historically, meat has been the staple of the Circassian diet. Their cuisine evolved based on their lifestyle (the Circassians were primarily engaged in livestock breeding and agriculture).

One of the most popular dishes in Circassian cuisine is libzha. It can be made with any type of meat. Armida from Cherkessk shared her chicken libzha recipe with NeMoskva. Armida got the recipe from her grandmother.

1. Ingredients: chicken, flour, butter, onion, garlic, salt, pepper.

First, cut the chicken into pieces—try to cut it so that half a chicken yields four to six servings. It's best to use home-cooked chicken, as this dish requires a rich, rich broth.

2. Cook the chicken together with the whole onion, carrot and pepper for at least an hour.

3. At the same time, chop another large onion and fry it in butter.

4. In another frying pan, sauté 2 cups of wheat or corn flour with 250 grams of butter until golden brown. Add the flour gradually, being careful not to add more flour than the butter can absorb. Make sure the pan is dry to prevent lumps from forming.

Then add the fried onion to the butter and flour. Stir. You should get a thick mixture.

5. Chop the garlic and add ground black pepper. Rub this mixture onto the finished chicken. Rub and let sit for 20 minutes.

6. Strain the broth and season with salt. Then add the broth to the thick onion-cream mixture and simmer over low heat, stirring constantly. Again, be careful not to form lumps. The finished consistency should be similar to pancake batter.

7. Gradually increase the heat. When the creamy onion sauce begins to simmer, add the chicken. The dish is ready to serve in 5-10 minutes. To fully appreciate the sauce's flavor, Armida recommends dipping bread in it.
