250 dishes will become standard Russian cuisine.
The Ministry of Industry and Trade is developing an international standard for Russian cuisine. It will include the names of over 200 dishes. The list will be developed by a working group comprising historians, restaurateurs, and representatives of associations.
How to пишет According to RBC, it will include familiar shchi, rassolnik, ukha, and blini, as well as more complex dishes: beef tripe and, for example, viziga—a product from the notochord in the spine of sturgeon, which is used for pie fillings.
The need for a food standard was explained by the promotion of national cuisine and the popularization of Russian dishes. The Ministry of Industry and Trade noted that 99% of cafes and restaurants in Russia now advertise foreign cuisine, and foreign dishes have displaced Russian ones in the economy. The prevalence of Russian cuisine was described as "critically low."
The first phase of the project is planned to be completed by October 1. Some of the dishes featured in the standard will be available for tasting at the All-Russian Festival of Russian Cuisine, scheduled for National Unity Day on November 4, 2025.
